
Use tofu! Some of you (tofu haters) might be crinkling your nose with disgust right now. But let me assure you that this diet cheese pie recipe actually does not taste like tofu at all even though tofu is its main ingredient. It has a similar texture to a real cheese pie and tastes just slightly different. Here is how you can make one:
Crust: 1 cup whole wheat flour, 3/4 cup granola, 1/4 cup butter, 2 tbsps. vegetable oil, 1 tbsp. maple syrup
Combine all the ingredients and press into a pie plate. Bake for 10 - 15 minutes in a preheated 450-degree oven. Set aside. Cool slightly. (The crust should be warm, not hot, when you add the filling.)
Filling: 3 cups mashed firm tofu, 1/2 cup maple syrup, 1/2 cup vegetable oil, 1/2 cup ground cashews, 1/4 cup soymilk
Blend all the ingredients in a food processor until smooth. Set aside.
Topping: 1/4 cup apple juice, 1 tbsp. cornstarch, 2 cups fresh blueberries
Combine apple juice and cornstarch together. Stir until cornstarch completely dissolves. Add blueberries. Cook over low heat until the mixture is thickened. Let it cool.
Pour the filling into the crust. Evenly spread the blueberry mixture on top.
